Victoria Ines, Colombia - Limited Edition
Victoria Ines has an unbridled passion for coffee, who has created her entire farm from the ground up, as the land she inherited didn’t originally contain one single coffee plant. After many years of hard work, Victoria’s Farm Tres Pinos is now certified organic and is extremely well cared for, due to Victoria's constant investment. This is less commonly seen in the area and testament to her dedication to high quality coffee production.
This coffee was purchased via our importer DR Wakefield under their ‘Project 121’ initiative. Project 121 was developed as a way of highlighting the quality and work of individual farmers within the cooperative structure. The producer gets their name and picture printed on their coffee and knows it goes direct to a roaster in the UK, providing recognisable value and pride in their work. We’re proud to have this coffee, and encourage you to grab a bag whilst you can!
A Longer fermentation is used on Tres Pinos farm to increase the coffee’s sweetness and flavour. This lasts 20 hours, before mechanically wet milling the cherries, and washing three times to ensure everything is clean. A final sorting and washing occurs before drying in a greenhouse on a parabolic style dryer for 15-25 days. Final quality control and grading is carried out at Cencoics’ central facility and lab in Popayan.
