Aprysa, Peru
Founded in 2014 by Katsuhiko (pictured), a Japanese coffee producer who moved to Peru after meeting his wife, APRYSA is one of the smallest cooperatives in the Amazonas region — and proudly so. With about 250 members and farms averaging just 1.5 hectares, the group has built its identity around family values, quality, and certification.
Katsuhiko leads the cooperative alongside Flor (Vice President since 2020) and Jerry, the agronomist who guides members on technical training, compliance, and sustainable practices. Together, they emphasize improving lives through Fairtrade premiums and reinvestment in training and materials.
Though yields have been challenged by heavy rains and pandemic-driven fertilizer shortages, APRYSA sees resilience in its producers and expects stronger harvests ahead. Their intentionally small size allows them to remain tightly knit while producing high-quality coffees with distinct regional character.
The altitude brings structure and vibrancy - and you can expect a clean, sweet cup with bright citrus and stone fruit acidity, layered with floral notes and a honey-like body.
